The production of high quality desiccated coconut begins when newly harvested coconuts are brought to the manufacturing plant and are de-shelled, with the brown testa of the meat removed, and then turned into fine granules. The granules are then pasteurized, and moisture is extracted. In the final stage of the process, the product passes through stringent quality control before it is packed.
Desiccated coconut is usually added as a sweet and delectable ingredient to cakes, biscuits, ice cream bars, coco bread and candies, chocolate filling, and coconut-sprinkled cereals. The longer strands such as shreds or flakes are usually used for garnishing and decorating. Consumers may purchase the product as macaroon or fine, medium, shreds, flakes and chips, packed in multi-ply kraft paper bags with inner sealed polyliner. Additional outer polywoven bags are available upon request. The product is also available as toasted, sweetened, or as toasted sweetened and come in 25 pounds, 50 pounds, and 100 pounds as well as in 12.5-, 25- and 50-kilogram bags.
